I don't see breadcrumbs

Add the Breadcrumbs block in the theme editor (Online Store → Themes → Customize), or turn on automatic placement under Appearance together with the "Breadcrumbs & schema" app embed. The app's overview page has buttons for both.
Check that breadcrumbs are on, and on for that kind of page, under Paths.
Breadcrumbs never show on the home page.

A product shows the wrong path

Paths follow the menu chosen under Paths. Enter the product on that page to see which collection won and why. Leave menu links out, choose between the deepest or the first match, or give the product (or its collection) a custom path.

Search engines don't show my breadcrumbs

Turn on the "Breadcrumbs & schema" app embed; it adds the structured data. Search engines pick it up on their next visit, which can take a few weeks. Google's Rich Results Test shows what they see.

Structured data shows up twice

Your theme may add some types itself (often Product and Organization). Turn those off under Structured data.
